Sweet Pumpkin Compote
Cut the pumpkin flesh into equal sized cubes. Place the cloves, cinnamon, grated lemon peel and ginger in a tea infuser or small piece of cheesecloth.
Bring the water, vinegar, sugar and spices to a boil. Add the pumpkin, cover and simmer over low heat until the pumpkin is fork tender. Drain well and transfer to a serving bowl.
