1 kilogram Pumpkin (flesh)
½ liter water
120 milliliters Vinegar
250 grams sugar
3 cloves
1 piece Cinnamon stick
1 teaspoon finely grated Lemon peel
1 centimeter diced ginger

Preparation steps

1.

Cut the pumpkin flesh into equal sized cubes. Place the cloves, cinnamon, grated lemon peel and ginger in a tea infuser or small piece of cheesecloth. 

2.

Bring the water, vinegar, sugar and spices to a boil. Add the pumpkin, cover and simmer over low heat until the pumpkin is fork tender. Drain well and transfer to a serving bowl.
