4 Leeks
150 grams cooked Sushi rice
Vinegar water (for molding)
200 grams fresh Tuna steak
1 tsp Wasabi
¼ toasted Nori seaweed
Wasabi (for serving)

Preparation steps

Wash the leek leaves and cut in half lengthwise, for a total of 8 strips. Blanch the leek leaves in boiling water for about 30 seconds, rinse, drain and spread out to dry on a clean kitchen towel.

Divide the sushi rice into 8 portions and shape each portion with moistened in water and vinegar with hands (into oblong balls). Cut the nori sheet in 8 rectangular pieces and attach each piece on top of a rice ball. Cut the tuna fillet into 8 slices. Place a leek on the work surface and place the tuna in the middle.  Take a little wasabi and place the rice ball with the nori on it. Hold the ends of the leeks strip upwards and gently tie together. Serve the tuna sushi with a dollop of wasabi paste on a plate.
