2 large, unwaked lemons (thinly pared rind)
1 ¼ cups sugar
½ cup water
6 Tea bag
4 cups boiling water
½ cup lemon juice
3 ½ cups chilled water
To garnish

Preparation steps

1.
Heat the lemon rind, sugar and water in a pan over a low heat until the sugar has dissolved. Bring to a boil, stirring, then reduce the heat and simmer for 2 minutes. Remove from the heat and leave to cool.
2.
Steep the tea bags in the boiling water, covered, for 5 minutes.
3.
Remove the tea bags and strain in the sugar syrup. Add the lemon juice and chilled water and stir well.
4.
Serve chilled garnished with mint leaves.
