250 grams Snow peas
salt
1 garlic clove
2 Tbsps freshly chopped Fresh herbs (such as: chervil and dill)
350 grams Goat cheese
1 Tbsp lemon juice
freshly ground peppers
2 scallions
100 grams Broad bean
4 Tbsps olive oil
2 Tbsps balsamic vinegar
1 pinch sugar
1 handful colorful Lettuce (such as: sorrel, red oak leaf and frisée)

Preparation steps

1.

Rinse peas and blanch in salted water for about 2 minutes. Remove, shock in ice water and drain well, then cut in half. Place 4 cake rings, about 7 cm (approximately 2 3/4 inches) in diameter on a baking sheet lined with plastic wrap. Line the edges of each ring with peas.

Peel and mince garlic. Combine garlic, herbs and cheese. Season with lemon juice, salt and pepper. Pour mixture into rings, spread even and chill for at least 30 minutes.

Rinse and slice scallions. Rinse beans. Blanch scallions and beans in salted water for about 4 minutes. Shock in ice water and drain. Combine scallions, beans, olive oil and balsamic vinegar. Season with sugar, salt and pepper. Top cake rings with bean mixture.

Rinse lettuce, spin dry and tear into small pieces. 

5.

Remove cake rings and plate. Serve with lettuce.
