1 egg
4 Tbsps Whipped cream
2 Tbsps Granulated stevia
150 grams Margarine
2 drops vanilla extract
1 organic Orange (zested and juiced)
300 grams Pastry flour
1 tsp Baking powder
Pastry flour (for work surface)
For decoration
150 grams sugar-free jam (such as currant)
Stevia (for dusting)
100 grams Walnut

Preparation steps

Beat the egg with an electric mixer until frothy. Add the cream and Stevia and stir. Add the margarine, vanilla extract, and the orange juice and zest, stir again then add the flour and baking powder and knead with hands until smooth. Wrap in plastic and chill in the refrigerator for 90 minutes.

Preheat the oven to 200°C (approximately 400°F). Line two baking sheets with parchment paper.

Roll out the dough on a floured surface and cut out wavy rectangles in three different sizes. Place on the baking sheets and bake in the oven for 8 minutes.

Meanwhile, heat the jam gently and spread through a sieve. Remove the cookies from the tray and spread 1 teaspoon of jam on the largest cookies, then press the medium size cookies on top, spread a little more jam on that, then place the smallest cookie on top. Sprinkle with the powdered sweetener press a walnut half on top with a little jam to hold it in place. Allow to cool and serve.
