- 1 cup dairy-free margarine
- ⅔ cup clear honey
- 1 pinch salt
- 1 tsp vanilla extract
- 2 cups Brown rice flour
- 1 ½ cups Tapioca starch
- 1 cup sweet rice flour
- ¾ tsp Guar Gum

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Beat the margarine in a mixing bowl until soft. Beat in the honey, salt and vanilla.
3.
Add the flours and guar gum and mix to a dough. Divide the dough in half and shape into 2 balls, then flatten each into a disc.
4.
Roll out one of the discs between 2 sheets of non-stick baking paper, about 5mm|1/4" thick.

Cut out rounds using a lace cookie cutter or card template. Gather up the dough trimmings and repeat until all the dough is used up. Repeat the process with the other dough disc.
6.
Place on the baking trays and bake for 12-14 minutes, until the edges are lightly golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
