- ½ cup unsalted butter
- ½ cup xylitol
- 1 tsp vanilla extract
- 1 egg (beaten)
- 1 cup all-purpose flour (plus extra for dusting)
- ½ Tbsp ground cinnamon
- To serve

Preparation steps
1.
Beat the butter, xylitol and vanilla in a mixing bowl until soft and creamy.
2.
Gradually beat in the egg until blended.
3.
Sift in the flour and cinnamon and mix to a soft dough. Wrap in cling film and chill for 1 hour.
4.
Roll out the dough about 5mm|1/4" thick on a lightly floured surface and cut into rectangles with a cookie cutter or pastry wheel.
5.
Place on the baking tray and bake for 10-15 minutes until golden. Cool on the tray for a few minutes, then place on a wire rack to cool completely.
6.
Sandwich the biscuits in pairs with chocolate ice cream.
