Cherries are full of antioxidants and anti-inflammatory compounds, as well as fiber and plenty of vitamins. This is a great way to use up the rest of your cherries during the summer before they go bad!
For additional flavors, you can add some orange or lemon zest to the mixture.

- 2 cups pitted, sweet, ripe Cherries
- 1 Tbsp Corn starch
- 1 Tbsp water

To sterilise jars: wash the jars in hot soapy water, rinse very well and put in a low oven for 15-20 minutes until warm and completely dry. Sterilise the lids in boiling water for 10 minutes, keeping the lids in the hot water until ready for use, then dry with kitchen paper.
Preparation steps
1.
Put most of the cherries into a blender or food processor and blend until smooth.
2.
Put into a pan with the remaining whole cherries and bring to a boil.
3.
Mix the cornflour and water to a smooth paste.
4.
Add to the cherry mixture and cook for 5-10 minutes until thickened.
5.
Spoon into sterilised jars and seal tightly.
