Ingredients

2 ⅔ cups white Bread flour
½ cube Yeast (approx. 20 g)
1 pinch sugar
½ tsp salt
1 Tbsp Oil
2 Tbsps Yogurt
Filling
2 cups sheep cheese (grated)
1 bunch parsley (chopped)
4 Tbsps olive oil
½ lemon (juiced)
2 cloves garlic cloves (chopped)

Preparation steps

1.
Dissolve the yeast with the sugar in approximately 150 ml lukewarm water, then mix with the flour, salt, oil and yoghurt and knead to a smooth dough. Put in a warm place to rise (e. g the oven at 50°) for about 1 hour.

Preheat the oven to 230°C (210 fan), 450°F, gas 8. Knock back the dough (knead again briefly) and divide into two portions. Shape each portion into an oval flatbread.

Mash the sheep's cheese with a fork and mix with the oil, parsley, lemon juice and garlic. Spread on the dough and fold the sides up over the filling almost to the middle.
4.
Place on a baking tray lined with baking parchment and bake in the oven for 20-25 minutes.
