- 1 onion
- 1 clove garlic cloves
- 1 Tbsp olive oil
- 1 bunch parsley
- 1 cup fresh Goat cheese
- salt
- freshly ground peppers
- 16 ozs Puff pastry (frozen, 10 squares)
- 1 egg yolk
- 2 Tbsps milk
Preparation steps

Peel and finely chop the onion and garlic. Heat the oil in a frying pan and sweat the onion and garlic until translucent. Leave to cool. Mix with the finely chopped parsley and goat's cheese. Season with salt and pepper.

Lay the puff pastry squares side by side to thaw. Line a baking tray with baking parchment.

Spread the filling on the pastry squares, then fold the pastry diagonally over the filling, pressing the edges together firmly. Place on the baking tray, leaving space between them.

Whisk together the egg yolk and milk and brush the filled pastries with the mixture. Bake in an oven preheated to 200°C | 400F | gas 6 for 20-25 minutes, until golden brown.
