4 Tbsps lemon juice
60 grams sugar
1 Tbsp Vanilla sugar
250 grams Quark
4 sprigs Woodruff
2 ½ sheets gelatin
3 egg whites
1 pinch salt

Preparation steps

1.

Rinse, trim, and chop the strawberries. Add to a tall mixing bowl with the lemon juice, 20 g (approximately 3/4 ounce) sugar, vanilla sugar, and the quark. Rinse the woodruff, dry, and remove the leaves. Add to the strawberries, and puree completely.

Soak the gelatin in cold water for 5-10 minutes. Squeeze out and melt in a saucepan over low heat. Stir in 2-3 tablespoons of the strawberry puree, then stir everything into the berry mixture. Chill in the refrigerator until the mixture begins to gel.

Beat the egg whites with the salt until stiff. Add in the remaining sugar. Fold into the strawberry mixture, and divide into bowls. Chill for at least 1 hour.

4.

Serve garnished with strawberries and woodruff.
