250 grams Strawberries
1 packet Vanilla sugar
2 Tbsps lemon juice
1 Tbsp powdered sugar
300 grams Whipped cream
2 Tbsps Yogurt (0.1% fat)
5 sheets gelatin
1 Star fruit
4 tsps chopped Pistachio

Preparation steps

1.

Rinse and hull strawberries and drain well. Soak gelatine in cold water. Mix strawberries with lemon juice, vanilla sugar and powdered sugar. Puree, then pass through a sieve to remove seeds. Combine strawberry mixture with yogurt.

Dissolve dripping wet gelatin in a small saucepan (do not boil!) and stir into strawberry mixture. Place in refrigerator until just starting to set.

Beat heavy cream until stiff and fold into mixture. Place mixture into a bowl and leave to set in refrigerator. Rinse and dry starfruit and cut into slices.

4.

Sprinkle pistachios onto 4 dessert plates. Using a wet spoon, scoop mousse from bowl and place on plates. Garnish with starfruit slices and serve.
