Preparation steps

1.
Rinse the strawberries and dry thoroughly with paper towels. Strawberries must be completely dry before dipping. One drop of water will cause the melted chocolate to seize. Strawberries should be at room temperature before dipping.

In the top of a double boiler set over simmering water, melt the chocolate, stirring until creamy and smooth. Remove from heat source and allow the chocolate to cool slightly. Do not allow the chocolate to set.

Line 2 baking sheets with waxed paper.

Grasp the stem or leaves of the strawberry and dip into the chocolate to cover. As you withdraw the strawberry, gently shake and swirl to let the excess chocolate drip off.
5.
Place on prepared baking sheets. Repeat until all the strawberries are covered. Place in the refrigerator for about 1 hour or until the chocolate hardens. Best if eaten within 24 hours.
