Strawberries contain more than 300 different aromatic substances, including ferulic and ellagic acid. These two secondary plant compounds are known for their cancer-preventive effect.

Couverture, like chocolate, consists of cocoa mass, cocoa butter and sugar - what distinguishes them both is the fat content. While chocolate contains only 18 percent cocoa butter, couverture contains at least 31 percent. Due to the higher fat content it is more liquid after melting and can be processed more evenly, so it's perfect for chocolate strawberries!

Preparation steps

1.

Rinse the strawberries and pat dry. Melt the chocolates separately over hot, not boiling, water baths. Remove from the heat and let cool. Divide the strawberries into 3 groups.

Using the first group of the strawberries, dip the berries halfway into the white chocolate and the other half in the dark chocolate. Drain the strawberries and place on parchment paper to dry.

Using the second group of strawberries, dip one side into the white chocolate and the other side into the dark chocolate. Decorate the berries with fine lines of the chocolates using a small piping bag. Place the berries on the parchment paper to dry.

4.

Using the third group of strawberries, pour some of the white chocolate into the dark chocolate (do not stir). Dip the berries into the mixed chocolate and dry on the parchment paper. Place the strawberries on a plate and serve.
