- 18 ozs Rhubarb (peeled and cut into 2 cm lengths)
- ½ cup sugar
- ⅛ cup Orange liqueur
- 4 Tbsps Clotted cream
- 2 Tbsps brown sugar (for sprinkling)

Preparation steps
1.
Put the rhubarb and sugar in a pan and bring to the boil. Add the orange liqueur and simmer over a moderate heat for around 5 minutes. Remove from the heat and leave to cool.
2.
Spoon the mixture into dessert glasses and top each one with a tablespoon of clotted cream. Serve sprinkled with brown sugar.
