- 1 ½ cups dried Broad bean
- 4 Tbsps olive oil
- 2 Artichoke (bottoms cut off, sliced)
- 3 cloves garlic cloves (finely chopped)
- 1 onion (cut into 3 cm wedges)
- ½ cup black Olives (pitted, drained, chopped)
- 4 preserved Anchovy (drained and chopped)
- ⅓ cup white Port wine
- ½ cup vegetable stock
- 2 Tbsps lemon juice
- Cumin powder

Preparation steps

Soften the beans in water overnight. The next day drain, place in a pot and cover with water. Season with salt and cook for 1 hour until soft. Drain and set aside.

Heat the oil in a pan and fry the artichokes and the garlic. Add the onions, reduce the heat and fry for a few minutes. Stir in the olives and anchovies and deglaze with the Port and the stock. Stir in the beans and simmer for 5 minutes. Season with lemon juice, ground black pepper, salt and cumin. Serve in bowls.
