1 Sea bass (Dorade, ready to cook about 500-600 grams)
4 little, green chili peppers
2 dried, red chili peppers (broken)
3 Celery (gren parts)
salt
freshly ground peppers
200 milliliters white wine
200 milliliters fish stock

Preparation steps

Rinse fish, pat dry and score diagonally 2-3 times on each side. Season with salt and crushed chili pepper inside and out. Place fish on the steamer. Combine white wine with fish stock and green parts of celery, bring to a boil, top with a steamer and spread fish with green chile peppers. Steam fish, covered, for about 8-10 minutes.

Remove fish carefully from the steamer, arrange on a serving dish and serve sprinkled with plenty of broth. If desired, garnish with green celery parts and serve.
