- 600 grams Pork tenderloin
- 1 tsp pink peppercorns
- 1 Lime
- 1 lemon
- ½ bunch cilantro
- 200 grams Basmati rice
- salt
Preparation steps

For the rice: Rinse the rice. Cook in double the amount of water until tender and all the water has been absorbed.
For the pork medallions: Trim the fat and skin from the pork. Crush the pink peppercorns in a mortar and sprinkle on the pork. Season with salt to taste. Rinse the lime and lemon under hot water, wipe dry and cut into thin slices, removing the seeds.

Line a large steamer with the lemon and lime slices. Place the pork on top. Rinse the cilantro, shake dry and pluck leaves. Place 1-2 leaves on top of each piece of pork.

Place over a pot of simmering water and steam for 8-10 minutes.
For serving: Serve the pork with the rice. Serve with soy sauce if desired.
