1 ⅕ kilograms potatoes

4 Rump steak (each about 180-200 grams)
1 Tbsp clarified butter
4 sprigs rosemary
5 Tbsps butter
350 milliliters milk
200 grams Snow peas
1 Tbsp vegetable oil
peppers
Nutmeg
3 Tbsps fried onion (premade)

Preparation steps

Preheat the oven to 80 ° C (top / bottom heat).

Scrub potatoes and cook in salted water for about 30 minutes.

Heat butter in a pan and  brown meat on all sides on high heat. Rinse and shake dry rosemary, pluck off leaves and sprinkle steaks with them. Top each steak with 1/2 teaspoon of butter and wrap steaks in aluminum foil. Bake in preheated oven at 80°C (approximately 175°F) for about 20 minutes.

Drain potatoes, peel and press through a potato ricer. Heat milk and add together with remaining butter to mashed potatoes. Add more milk if necessary and season with salt, pepper and nutmeg.

Rinse snow peas. Heat oil in a pan and saute peas for 2-3 minutes.

Remove meat from the oven. Spread mashed potatoes on 4 preheated deep plates, sprinkle with fried onions and drizzle with pan juices. Add snow peas and top with sliced diagonally steaks. Garnish with rosemary and serve.
