8 small Sirloin steak (each 80 grams)
500 grams Turnip
1 l Vegetable broth
1 Tbsp butter
2 Tbsps sugar
1 Tbsp clarified butter
125 milliliters Whipped cream
salt

2 Tbsps scallions

Preparation steps

1.

Peel the turnips, quarter and cook in the broth for 10-15 minutes. Drain and pour the broth elsewhere. Add the cooked beets to a pan with hot butter, sprinkle with sugar, caramelize while gently stirring and deglaze with a little broth. Beat the cream until half stiff and chill.

Season the steaks with salt and pepper and cook in a large skillet in butter 2-4 minutes on both sides (depending on doneness preference).

Serve the steaks with Teltow turnips and garnish with freshly ground pepper and the chopped chives. Drizzle the cream on the turnips and serve immediately.
