6 slices rustic Bread
2 cloves garlic cloves (chopped)
5 Tbsps olive oil
2 ⅔ cups cherry Tomatoes (halved)
2 large, rump Steak (trimmed)
thyme (to garnish)

Preparation steps

1.
Cut the crusts off 2 of the slices of bread and set aside the others.
2.
Heat the oven to 200C (180C fan) 400F, gas 6 and immediately put the crustless bread slices on the bottom shelf in the oven for 5 minutes.
3.
Remove the bread from the oven, crumble to make coarse breadcrumbs and mix with the garlic and about 1 tbsp oil. Set aside.
4.
Coat the cherry tomatoes with 3 tbsp oil and place in a baking tin. Sprinkle with a little salt and roast for about 5 minutes or until the the skins start to blister. Remove from the oven and set aside.
5.
Heat the remaining oil in a griddle pan until very hot. Season the meat with a little black pepper and cook for about 3 minutes each side. Remove from the pan and rest for 5 minutes, then slice.
6.
Wipe the griddle pan dry, return to the heat and toast the remaining bread on both sides. Keep warm.
7.
Top the toasted bread with the tomatoes, sliced steak and garlic breadcrumbs, sprinkle with salt and garnish with thyme sprigs.
