- ⅓ cup olive oil
- 1 small Baguette (sliced)
- ½ cup extra virgin olive oil
- 3 Tbsps balsamic vinegar
- ½ tsp caster sugar
- 2 scallions
- 2 little gem Lettuce (halved)
- Arugula
- mint
- 1 ½ cups cherry Tomatoes (halved)
- 1 ½ cups Feta (cubed)
- salt
- freshly ground Black pepper

Preparation steps
1.
Brush the slices of baguette with olive oil on both sides. Toast under a hot grill for a minute on both sides until golden. Remove to a wire rack to cool.
2.
Whisk together the extra-virgin olive oil, balsamic vinegar, sugar, and seasoning in a mug.

Finely slice the whites of the spring onions and set to one side. Finely chop the green stalks and stir into the dressing.
4.
Arrange the lettuce, rocket, mint leaves, whites of the spring onions, tomatoes, and feta in four mugs. Tuck the toasted baguette slices into the mugs alongside the salads.
5.
Spoon the dressing over the salads before serving.
