½ bunch Chives
4 ozs lamb's lettuce
½ bunch Radish
1 handful red radish Cress

Preparation steps

1.

Separate eggs and mix egg yolks with 3.5 ounces cream cheese and baking powder. Beat the egg whites with 1 pinch of salt until stiff and fold into the cream cheese cream in portions.

Spread the dough in 8 flat portions on a baking tray lined with baking paper and bake in a preheated oven at 300 °F for about 20 minutes. Remove from the oven and allow to cool for about 10 minutes.

In the meantime, mix the remaining cream cheese with milk, mustard, a little salt and pepper. Wash the chives, shake dry, cut into small rolls and stir into the cream.

4.

Clean, wash and shake dry lamb's lettuce. Clean, wash and finely slice the radishes. Wash the cress and drain well. Spread some cream on the underside of 4 Cloudbreads each, arrange lamb's lettuce, radish slices, remaining cream and cress on top and place 1 Cloudbread on top of each as a lid.
