3 Tbsps vegetable oil
1 onion (finely chopped)
1 stalk Celery (finely chopped)
1 Tbsp Curry powder
1 tsp ground Cumin
1 carrot (finely chopped)
2 red chili peppers (deseeded and finely sliced)
1 cup Split pea
3 cups chicken stock
2 Chicken breasts (skinned and cubed)
2 scallions (sliced)
2 Tbsps chopped Cashews
cilantro (to garnish)

1 Cutting board, 1 Peeler, 1 Small knife, 1 Pot mit Deckel, 1 Measuring cups, 1 Tablespoon, 1 Small bowl, 1 Fork, 1 Immersion blender

Preparation steps

Heat the oil in a large pan and gently cook the onion and celery until soft.
2.
Stir in the curry powder and cumin, cook for 1 minute then add the carrot and chillies. Add the split peas and the stock, season with salt and pepper and simmer gently for 30 minutes.
3.
Add the chicken and continue cooking until the spilt peas are very soft and the chicken is cooked through.
4.
Reserve about a quarter of the soup then blend the remaining to a puree. Return to the pan with the reserved soup, reheat gently and pour into warmed bowls.
5.
Garnish with the spring onions, chopped cashew nuts and cilantro leaves.
