400 grams Red Spiral pasta
1 can diced Tomatoes
2 garlic cloves (peeled)
1 onion (finely chopped)
olive oil

Preparation steps

Heat 3 tablespoons of olive oil in a pan, and sauté the onion until soft. Add the tomatoes, 2 tablespoons of sugar, and the garlic. Bring the mixture to a boil. Reduce the heat, cover, and simmer for 10-15 minutes. Season to taste with salt, pepper, and nutmeg.

Cook the pasta in boiling salted water until al dente. Drain the pasta, reserving 1 cup of the cooking liquid. Mix the pasta with 2 tablespoons of the butter and 4 tablespoons of the cooking water. Toss to combine, then transfer to plates. Top the pasta with the sauce. Garnish the pasta with freshly grated parmesan cheese and serve immediately.
