500 grams Spinach
10 slices Toast
250 grams Feta
2 minced garlic cloves
1 finely chopped shallot
2 Tbsps olive oil
salt
freshly ground peppers
5 eggs
200 milliliters Whipped cream
2 tsps Lemon peel
70 grams grated Parmesan

Preparation steps

1.

Rinse the spinach and place in a large pot while still wet. Heat until wilted. Place in a sieve to drain. Squeeze the excess moisture from the spinach and finely chop.

Cut the toast in half diagonally.

Heat the oil in a skillet. Add the shallots and cook until translucent. Stir in the spinach and garlic, and cook for 5 minutes. Season with salt and pepper to taste. Stir in the feta cheese.

Place the spinach mixture in a greased baking dish and arrange toasts on top.

In a bowl, whisk the eggs with the cream, and season with salt and pepper to taste and the lemon peel. Pour over the spinach and toasts. Sprinkle the Parmesan on top.

6.

Bake in a 180°C (approximately 350°F) oven until golden brown, about 35 minutes. Serve hot.
