- ¼ cup olive oil
- 2 cloves garlic cloves (finely chopped)
- 14 cups Spinach
- salt
- 2 ½ cups cream (48% fat)
- 2 cups Goat cheese (crumbled)
- 4 cups fish fillets (roughly chopped)
- 9 fresh Lasagne noodle
- freshly ground White pepper

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a large baking dish.
2.
Heat half the oil in a pan and add the garlic. Cook for 1 minute until softened.
3.
Add the spinach, season with salt and cook for 3-4 minutes, until wilted. Drain and place on absorbent kitchen paper, then chop roughly.

Pour the cream into the pan and cook gently for 3-4 minutes, until reduced slightly.
5.
Add 3/4 of the cheese and stir until thickened. Season with salt and pepper and cover with cling film. Keep warm.
6.
Season the salmon with salt and pepper.

Heat the remaining oil in a frying pan and cook the salmon for 1-2 minutes on 1 side, until just coloured. Remove from the pan and drain on absorbent kitchen paper.
8.
Spoon a thin layer of sauce over the base of the baking dish. Cover with 3-4 lasagne sheets, overlapping them slightly. Add a layer of spinach. Cover with another layer of pasta.
9.
Add the salmon and another layer of spinach and cover with another pasta layer.
10.
Spoon over another layer of the sauce and sprinkle with crumbled cheese.
11.
Bake for 20-25 minutes, until golden and bubbling.
