250 grams Mozzarella
4 Peaches
150 grams Prosciutto (thinly sliced)
100 milliliters Peach Juice
3 Tbsps white balsamic vinegar
5 Tbsps olive oil
1 Tbsp freshly chopped Basil

Preparation steps

Toast the pine nuts in a dry pan. Remove from the heat and set aside. Rinse and dry the spinach, and tear into bite-sized pieces. Drain the mozzarella thoroughly, then tear into pieces. Rinse and halve the peaches. Remove the stones and cut into wedges. Arrange the spinach on plates, and top with the mozzarella, peaches, and prosciutto.

For the dressing mix the peach juice with the vinegar, oil, and basil Season to taste with salt and pepper. Drizzle the dressing over the salad. Garnish the salad with the pine nuts and serve.
