125 grams Spinach
200 grams Pastry flour
2 Tbsps Semolina flour
3 eggs
3 Tbsps olive oil
salt

½ bunch Basil
4 Tbsps grated Parmesan
4 slices Tuna steak (each about 160 grams)
2 Tbsps lemon juice

Preparation steps

1.

Rinse spinach. Drain and rinse with cold water. Remove excess water and puree with an immersion blender.

Combine pureed spinach with flour, semolina, eggs, 1 tablespoon oil and season with salt and pepper. Mix to make a dough (if necessary, knead with extra flour) and let rest for about 1 hour.

Blach tomatoes for a few seconds, peel, quarter and remove seeds. Cut into small cubes.

Cut basil leaves into strips.

Put the dough on a floured surface and roll out thinly (or use a pasta machine). Cut the dough into strips and place in plenty of boiling salted water. Cook for 3 to 4 minutes, drain, and mix with tomato and basil.

Drizzle tuna with lemon juice. Season with salt and pepper and cook in remaining oil for 2 to 3 minutes on each side.

7.

Serve pasta and tuna on plates, sprinkled with Parmesan.
