- 4 ½ ozs long Glass noodles
- mince
- 1 large onion
- 1 chili pepper (chopped)
- 1 clove garlic cloves
- 2 Tbsps soy sauce
- 1 Tbsp Rice wine
- 2 sticks Celery
- 2 handfuls fresh Spinach
- 2 Tbsps Morel (soaked and chopped)
- ⅞ cup Meat stock
- 2 Tbsps Oil
Preparation steps

Soak the glass noodles in cold water. Peel and finely dice the onion and garlic. Wash and slice the celery. Heat the oil in a wok and sweat the onions, garlic and celery, stirring, for 3 minutes. Add the meat and a little chilli and fry, breaking up the mince. Deglaze with soy sauce and add the stock. Bring to the boil, add the morels and drained glass noodles and cook until the glass noodles are al dente. Add soy sauce and rice wine to taste. Mix in the washed spinach, put into bowls immediately and serve.
