Preparation steps

Pick out the spinach, rinse, trim and blanch in salted water. Rinse and drain well. Chop finely with a sharp knife or purée in a blender.

Mix the flour with the egg, the milk, a pinch of salt and a pinch of nutmeg and stir in the spinach.

Leave the batter to rest for 20 minutes.

Heat some oil in a crêpe pan and pour in a small ladle of batter. Spread the batter evenly by rotating and tilting the pan. Fry on each side for 1-2 minutes.

Remove from the pan and keep warm. Repeat with the remaining batter to create the rest of the crêpes.

Serve the crêpes folded and with guacamole or salsa chili if desired.
