3 ozs smoked Salmon
1 handful Baby spinach
¼ cup slivered almonds (toasted and chopped)

Preparation steps

1.
In a small bowl, scramble egg and egg white together and season with salt and pepper.
2.
Heat the oil in a small frying pan on medium-high heat. Cover the base of the frying pan with the egg, turn heat to low and cook until the egg is set.
3.
Flip the omelet over and cook for another minute; then remove from the heat and let cool.
4.
Layer with smoked salmon, spinach and roll up. Sprinkle almonds on top; slice and serve.
