24 ozs boneless Chicken breasts
1 Tbsp sesame oil
1 onion (peeled and sliced)
1 cup sliced Mushrooms
1 green Bell pepper (rinsed; trimmed and sliced)
2 carrots (peeled and chopped)
4 cloves garlic cloves (peeled and minced)
2 red chili peppers (rinsed; seeded and cut into rings)
1 inch freshly grated ginger (peeled and grated)
6 cups low-sodium Chicken broth
¼ cup low-sodium soy sauce
4 Tbsps fresh Lime juice
1 stick Lemongrass
2 cups asian noodles
2 cups Bean sprout (plus extra for garnish)
½ bunch scallions (cleaned and thinly sliced)
¼ cup finely chopped, fresh cilantro
crushed, red Chili flakes (to taste)

Preparation steps

Rinse chicken under cold running water and pat dry with paper towels. Cut into bite-size pieces.

Heat oil in a large pot set over medium heat. Add chicken and cook until brown on both sides and cooked through, about 8 minutes. Remove chicken from pan and keep warm.

Using the same large pot, saute onions and mushrooms until tender, about 6 minutes. Add peppers, carrots, garlic, chili peppers and ginger and saute until fragrant, about 1 minute. Add the chicken broth, soy sauce, lime juice, lemon grass and cooked chicken. Bring to a boil. Reduce heat and simmer, uncovered, for 20 minutes.

Add Asian noodles, stirring to incorporate, cook until just tender. Stir in bean sprouts, and scallions.

Ladle into individual bowls and garnish with sprouts, cilantro and red pepper flakes. Serve.
