- 4 garlic cloves
- 200 grams Fennel
- 200 grams Celery root
- 4 Tbsps olive oil
- 200 grams white Beans (canned)
- 1 l Beef broth
- 1 bunch parsley
- 5 Sage
- 10 sun-dried Tomatoes (in oil)
- 4 Italian sausage
- 200 grams Pasta (such as elbow macaroni)
- salt
- freshly ground peppers

Preparation steps

Peel and finely chop onion and garlic. Rinse, trim and slice fennel. Rinse, trim and cut celery into cubes. In a large saucepan, sauté onion and garlic in oil until softened. Add drained beans and broth and simmer about 10 minutes. Rinse parsley, strip leaves from stems and coarsely chop. Rinse sage and shake dry. Finely chop sun-dried tomatoes. Add sausages and vegetables to pan and simmer about 20 minutes more.

In the last 5-6 minutes of cooking time, add pasta to the soup and cook until al dente, according to package directions. Add herbs and tomatoes and season with salt and pepper.
