4 Charentais melons
2 Limes (organic)
1 centimeter ginger (peeled)
5 tsps olive oil
2 Tbsps white balsamic vinegar
200 milliliters Whipped cream (at least 30% fat content)
2 chili peppers
salt

300 grams cooked shrimp (for serving)
Lemongrass (to garnish)

Preparation steps

Rinse the melons, cut a lid off each and remove the seeds. Loosen and scoop out the pulp, up to 1/2 cm from the edge (approximately 1/4 inch). Squeeze the lime.

Mix the melon pulp with the lime juice, the peeled ginger, the oil and the vinegar and purée together. Mix in the cream and add a little water if desired.

Rinse the chile peppers and cut into fine strips. Pour the soup into the melons and shower with chile strips. Add the shrimp to the top and serve garnished with lemongrass.
