1 Tbsp lemon juice

4 garlic cloves
1 pc ginger (about 3 cm)
2 red chili peppers
150 grams sugar
1 tsp peppercorns
1 tsp allspice
1 tsp Coriander
salt
2 Tbsps White vinegar

Preparation steps

Peel the mango, dice the flesh and sprinkle with the lemon juice. Peel and finely chop the onion, garlic and ginger. Rinse and chop the chile. In a saucepan, bring the sugar and 1 tablespoon of water to a boil. Add the onion, garlic, ginger and chiles and cook over low heat for 5 minutes. Add the mango cubes and cook for another 5 minutes.

Crush the spices and salt in a mortar and add to the mixture. Mix in the vinegar and bring to a boil. Season the chutney to taste and pour into jars. Seal well and keep in the dark.
