Spicy Chicken Skewers with Salad

- 5 Tbsps olive oil
- 4 Tbsps Orange juice
- 2 Tbsps lemon juice
- 2 tsps Dijon mustard
- 1 tsp chili peppers (grtocknet; coarsely crushed)
- 1 garlic clove
- ½ bunch Basil
- salt
- freshly ground peppers
- 400 grams Chicken breasts
- 150 grams Wild herb salad
- ½ tsp sugar
- 2 Tbsps light balsamic vinegar
- 8 Wooden skewers
Preparation steps
For the meat marinade, combine 2 tablespoons olive oil, 2 tablespoons of orange juice, lemon juice, 1 teaspoon mustard and crushed chili. Peel and squeeze garlic through a press. Rinse basil, shake dry and chop leaves finely. Mix basil and garlic into meat marinade, season heavily with salt and pepper.
Cut chicken breasts into bite-sized cubes and mix in a bowl with the meat marinade. Infuse for at least 15 minutes.
Rinse wild herb salad mixture and spin dry.
For the salad dressing, mix 1 teaspoon mustard with sugar, salt and pepper. Slowly whisk in remaining olive oil (3 tablespoons), then the balsamic vinegar and remaining orange juice (2 tablespoons).
Place marinated chicken cubes on skewers. Grill skewers for 10 to 14 minutes, turning often. Serve skewers with salad on plates. Drizzle with salad dressing and serve.
