Preparation steps

Line baking pan with baking paper. Clean, peel and finely grate the carrots. Mix cottage cheese and eggs with the whisks of a hand mixer. Stir almonds, flaxseed, oat bran, soy flour, oat flakes, baking powder, sunflower seeds, and grated carrots into the cottage cheese mixture.

Season bread dough with bread spice and salt, pour into baking pan, and smooth out. Bake in a preheated oven at 180 °C / 350 °F for 70-80 minutes.

Let bread cool briefly. Then turn out of the pan and let cool completely on a cooling rack. Cut into slices to serve.
