2 Tbsps olive oil
1 onion (finely chopped)
2 cloves garlic cloves (finely chopped)
3 cups lean Ground beef
½ tsp Chili powder
1 cup canned Kidney beans
1 cup sweet Corn
Béchamel sauce
1 ¾ cups milk
1 bay leaf
10 peppercorns
½ onion (cut into thick slices)
¼ cup butter
cup all-purpose flour
Crumble mixture
cup self-rising flour
1 tsp mustard powder
¼ cup butter
¼ cup Cheddar cheese (grated)
1 packet Tortilla chip (for garnish)

Preparation steps

Heat olive oil in a heavy based frying pan, fry onion and garlic until soft. Add minced beef, mix in the chilli powder and brown over a gentle heat for 20 minutes until cooked through. Season with salt and freshly ground black pepper.

To make the béchamel sauce, heat the milk in a saucepan with the bay leaf and peppercorns until simmering point is reached. Strain the milk, discarding the peppercorns and bay leaf.

In a saucepan, melt the butter and add the flour whisking until a smooth glossy paste is formed. Gradually whisk in the milk, bring to the boil whisking until the sauce is thick and glossy. Cook for a further 5 minutes

Stir the minced beef, kidney beans and sweetcorn into the sauce and add seasoning to taste. Pour into an ovenproof dish. Preheat the oven to 180°C (160 fan) | 350°F | gas 4.

To make the crumble topping, sift the flour into a large bowl with the mustard and salt. Add the butter and rub in with the fingertips to resemble fine breadcrumbs. Stir in the grated cheese.
6.
Cover the beef with the crumble mixture and cook in the oven for 30 minutes or until cooked and golden brown. Garnish with a few tortilla chips and serve.
