2 cloves garlic cloves (finely chopped)
2 Tbsps lemon juice
1 tsp Chili powder
½ tsp ground Cumin
1 Tbsp paprika (sweet)
1 tsp dried thyme
4 Tbsps olive oil
2 small chicken (approx. 800 g each, halved lengthways)

Preparation steps

1.
Mix the garlic with the lemon juice, chilli powder, cumin, paprika, thyme and olive oil. Rub the mixture into the chicken all over. Cover and leave in the fridge to marinate for around 2 hours.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.
3.
Remove the chicken from the marinade and bake in the oven on the grill rack (over the grill pan), skin side up, for 35 minutes.
4.
Meanwhile season the marinade with salt and brush it over the chicken skin from time to time. When the chicken is cooked, remove it from the oven and serve with a side salad if desired.
