1 cup Couscous
8 lamb chops (trimmed)
4 Tbsps Harissa
3 Tbsps olive oil
4 Artichoke hearts (halved vertically)
lemons (juice and zest)
2 Red onions (thinly sliced into rings)
9 ozs cherry Tomatoes (halved)
2 Tbsps chopped parsley

Preparation steps

1.
Soak the couscous according to the packet instructions and set aside.
2.
Rub the lamb chops with the harissa on all sides and set aside.
3.
Grease a griddle pan with a little of the oil and cook the artichoke hearts until lightly browned. Set aside.
4.
Brush the pan with a little more oil and cook the lamb chops for about 6 minutes on each side, basting from time to time.
5.
Meanwhile, cut the lemon zest into fine strips. Fluff the couscous with a fork and mix in the zest and juice along with the remaining oil, the onions, tomatoes and parsley. Season with salt and pepper.
6.
Serve the lamb chops on a bed of couscous with the artichoke alongside.
