- 250 grams Lentils
- 800 milliliters clear Vegetable broth
- 1 bay leaf
- 1 onion
- 250 grams potatoes
- 2 carrots
- 150 grams green Beans
- 1 stalk Leeks
- 2 Tbsps butter
- 2 pairs Boiled sausage
- Vinegar
- salt
- freshly ground peppers
- 2 Tbsps chopped parsley

Preparation steps
1.
Bring the broth, lentils and bay leaf to a boil. Cover and simmer for about 35 minutes.

Peel and cube the potatoes and carrots. Rinse the leek and chop into small pieces. Rinse the beans and cut off the ends. Peel and chop the onion. Sweat the onion in butter until translucent. Add the potatoes and carrots. Saute briefly. Add 1 cup of water. Cover and simmer for about 15 minutes. After 5 minutes, add the beans. 3 minutes before the end of cooking, add the leek.

Slice the sausage and add to the lentil soup.

Add the vegetables into the lentil soup. Season with vinegar, salt and pepper. Serve sprinkled with parsley.
