1 l Vegetable broth
300 grams Spinach
200 grams Whipped cream
4 onions
3 garlic cloves
4 Tbsps vegetable oil
2 Tbsps butter
1 tsp ground coriander
1 tsp ground cumin
1 tsp Turmeric
1 pinch Chili powder
1 pc ginger (about 2.5 cm)
salt
peppers (freshly ground)

Preparation steps

Rinse, trim, and drain the spinach. Peel and finely chop the garlic and ginger, and sauté in hot butter in a pan. Stir in spinach, broth and cream. Sprinkle with turmeric, coriander, cumin and chili powder. Season with salt and pepper. Cover and let simmer for approximately 15 minutes.

While the soup simmers, peel the onions and slice into thin rings. Fry until golden brown in hot oil.

3.

Ladle soup into bowls, garnish with the onion rings and serve immediately.
