- 2 onions
- 1 garlic clove
- 2 Tbsps butter
- 800 milliliters Chicken broth
- salt
- freshly ground peppers
- ground Nutmeg
- 75 grams Whipped cream
- 150 grams Gorgonzola
- 4 Tbsps roasted Pine nuts

Preparation steps

Rinse spinach and remove stems. Reserve some small leaves for garnish. Peel and finely chop onion and garlic. Heat butter in a large saucepan. Sauté onions and garlic until translucent. Add spinach and 200 ml (approximately 3/4 cup) broth. Bring to a boil, reduce heat, and simmer until spinach is tender.

Puree the soup and add remaining broth. Season with salt, pepper, and nutmeg. Return the soup to a simmer. Whip cream with a pinch of salt until stiff and fold into the soup. Coarsely chop gorgonzola. To serve, ladle soup into bowls and top with gorgonzola, spinach leaves, and pine nuts.
