150 grams Spelt grain
2 Fennel bulb
150 grams ham (diced)
100 milliliters Vegetable broth
2 Apple
200 grams Beans
3 Tbsps grapeseed oil
2 Tbsps White vinegar
1 Tbsp lemon juice
1 generous pinch Curry powder
salt
Red pepper flakes

Preparation steps

1.

Soak spelt overnight in a bowl of water. Rinse spelt and combine with water to cover in a pot. Bring to a boil, then cover and simmer about 25 minutes over low heat. Let cool.

Rinse, trim and cut fennel into strips.

Rinse, quarter and remove seeds from apples. Dice apples.

Rinse, trim and leave beans whole or halve, depending on the size.

Sauté beans, ham and fennel in hot oil. Add curry powder and broth. Simmer until beans are al dente, about 5 minutes. Combine bean mixture with spelt, diced apple, vinegar and lemon juice and let marinate about 10 minutes. Season generously with salt and red pepper flakes.
