1 carrot

400 grams cooked potatoes
1 onion
3 Tbsps olive oil
2 Tbsps finely chopped parsley
1 tsp thyme
2 garlic cloves
8 eggs
100 milliliters milk
½ tsp Curry powder
½ tsp ground paprika

Preparation steps

Preheat oven to 180°C (approximately 350°F). Peel and thinly slice kohlrabi and carrot. Rinse snow peas and trim ends. Peel and slice potatoes. Peel and finely chop onion. In a pan, cook onions in hot olive oil until translucent. Stir in snow peas, carrots, and kohlrabi and fry for a few minutes. Add potato slices, parsley, and thyme. Peel garlic and press through a garlic press into the pan. Fry briefly, stirring. Season with salt and transfer mixture to a baking dish coated with oil.

Whisk milk with eggs, stir in spices and pour over vegetable mixture. Bake on the center rack until eggs are set and top is lightly browned, about 35 minutes. Remove from oven, cut into pieces and serve.
