2 cups Almond flour
¾ cup sugar
1 large egg
1 unwaxed lemon (finely grated zest)

Preparation steps

1.
Mix the almonds with the sugar, egg and lemon zest in a mixing bowl and mix to a cohesive dough. Cover and chill for at least 12 hours.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
3.
Pinch off pieces of dough about the size of a walnut and press into pyramid shaped moulds, or shape with your hands.
4.
Arrange about 2.5cm| 1" apart on the baking trays.

Bake for 8-10 minutes until just golden but still soft. Cool on the trays for 5 minutes, then place on a wire rack to cool completely. They will harden as they cool.
