- 1 ⅔ cups all-purpose flour
- 1 tsp Baking powder
- ¾ cup Almond flour
- 2 tsps Ginger powder
- 1 tsp ground cinnamon
- 1 pinch ground cloves
- 1 pinch grated Nutmeg
- ½ tsp baking soda
- ⅞ cup clear honey
- 1 unwaxed lemon (finely grated zest)
- 0.333 cup butter
- For the icing
- 1 cup powdered sugar
- 1 egg white (beaten)
- 1 Tbsp water (if needed)
- 5 ozs plain Dark chocolate (70% cocoa solids, melted)
Preparation steps
1.
Line two large baking trays with non-stick baking paper.

Stir together the dry ingredients in a mixing bowl.
3.
Heat the honey and butter in a pan over a low heat until the butter melts, then pour into the flour mixture with the lemon zest. Mix well to a dough. Cover the bowl and leave to cool.

Heat the oven to 180°C (160° fan) 350°F gas 4.

Roll pieces of the dough into about 30 balls.

Place apart on the baking trays and flatten each ball slightly.
7.
Bake for 15 minutes until golden. Cool on the trays for a few minutes, then place on a wire rack to cool completely.
8.
For the icing: sift the icing sugar into a bowl. Beat in the egg white and enough water to form a smooth, thick icing.
9.
Dip the top of each biscuit in the icing and spread with the back of a knife. Leave to set.
10.
Drizzle the melted chocolate over the biscuits and leave to set.
