- 6 eggs (separated)
- 1 cup caster sugar (heaped)
- 1 unwaxed Orange (finely grated zest)
- 1 unwaxed lemon (finely grated zest)
- Almond extract
- 1 ⅔ cups Almond flour
- powdered sugar (for dusting)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 28cm|11" cake tin and dust with flour.
2.
Whisk together the egg yolks and sugar until thick and pale, then beat in the orange and lemon zests and almond extract. Add the ground almonds and mix very well.
3.
Whisk the egg whites until stiff and fold them into the egg mixture.
4.
Put into the tin and bake for about 40 minutes until firm. Cool completely in the tin.
5.
Remove from the tin and place 3 forks on the cake. Sift icing sugar over the top and carefully remove the forks.
6.
Serve with grapes and ice cream.
