400 grams Spaghetti
salt
3 scallions
1 pc Parmesan (40 grams)
3 eggs
freshly ground peppers
3 Tbsps olive oil

Preparation steps

1.

Cook the spaghetti according to package directions until al dente.

2.

Meanwhile, rinse scallions, thinly slice and place in a bowl. Grate the Parmesan and transfer to the bowl  along with the eggs.

3.

Drain the spaghetti well and fold into the egg mixture. Season with salt and pepper.

4.

Heat oil in a pan. With a fork twirl the spaghetti into nests, place in the pan and saute over medium heat until golden brown on both sides, about 5 minutes.
